Crystallized Roses and the Beauty of Sugar Crystals
“It takes around 60 days to complete?”
This is a question we often hear.
We experimented with food dehydrators and low-temperature, low-humidity drying equipment, hoping to shorten the process. Yet the delicate sugar crystals we envisioned never developed.
We then consulted a specialist in sugar research, who explained the importance of slow, natural drying with gentle airflow.
Direct airflow from drying equipment can cause the surface to become syrupy, while gradual drying in low humidity allows beautiful crystals to form.
Sixty days may seem like a long time when measured by efficiency alone. Yet there is a beauty that can only emerge through this patient process.
We carefully craft each crystallized rose, cherishing the time it takes for its delicate crystals to form.
